As a family we farm rare breedson the Surrey Hillsusing traditional methods to produce the most marvellous meat, which we sell in all its guises. We make, bake and preserve a host of other treats and also stock the best of the region's local products.
We began farming in 1993 after 30 odd years in the food business because we felt that we wanted to serve locally and ethically reared meat with real flavour, unlike most of the meat available at the time.
This meant a number of things to us: traditional, rare breeds, extensive rearingand good old fashioned husbandry to hopefully end up with meat that (to rehash an overused phrase) tastes like it used to. We started in a small way, selling this fantastic meat on the menu of our gaggle of London pubs.
After a few years, many mistakesand a decision to reduce the number of pubs to one, we found ourselves in a position to open a butchers andfarm shop in The Parrot. This has been serving the local area forseven years now.Home Farm lies at the foot of Leith Hilland is aboutfour miles (as the pig flies) from Butchers Hall and The Parrot.
We have a resident master butcher and dedicated chefs, who ensure not a scrap of our beautiful beasts are wasted.We cure on site producing charcuterie such as Coppa (featured in Delicious magazine), pastrami, biltong, mortadella and salami, to name just a few.Using the whole carcass also means that we create new or more unusual products such as mutton hams.
Being livestock farmers and butchers we are undeniably (and unashamedly) carnivorous in our attitude, but man cannot live by chops alone. So we have stuffed our farm shop full of goodies we want to eat.
Whilst we make a huge amount ourselves in the onsite kitchen (breads, pies, chutneys, jams, pickles, pastry, anything else we fancy) what we cannot make we seek to source from within 30 miles. Ok, so we may stock limes for your obligatory G&T whilst cooking the roast & we believe there are certain iconic foods that cant be done without-Heinz ketchup & Gentlemans Relish, are two that fall into this category.
Alongside our own meat and homemade goodies we also offer a great range of other local products from like-minded artisan suppliers.
We have events that allow people to get involved, such as our Bangers & Beer evening, when people are able to make their own sausages, pie competitionsand our butchery courses all very popular. We are in control of the whole process, from farm to fork, and so can provide great knowledge and service.
As all our processes are by hand, we are able to customise pies etc for dinner parties, even using your own crockery! Just ask us for a fillet of beef Wellington for 10and well do all the work for you. A starter of our home cured charcuterie, olives and breadand finish off with a chocolateand hazelnut meringueand some local cheese.
We offer a full catering service; we will just supply the goodies or cookand serve them as well:tuck boxes for local schools delivered weekly; picnicand hamper boxes for scoffing or presents; andspitroasts (our own pigs or lambs). Truly local food in the heart of the Surrey Hills!
