Having gained his taste for fine dining in Claygate, Alyn Williams, chef patron of his eponymous Michelin star and three AA rosette restaurant at the Westbury hotel in London's Mayfair, has been named the 2012 National Chef of the Year.

Run by the Craft Guild of Chefs, the event is one of the most prestigious culinary competitions in the industry, with past winners including Gordon Ramsay, Eyck Zimmer and Simon Hulstone.


Having placed second last year, Alyn and the seven other finalists were asked to cook three courses in two hours after being presented with a mystery basket of ingredients.


Alyns winning menu consisted of fillets of mackerel, salted cucumber, mussels, parsley, lemon pure, pak choi and turnip; followed by saddle of venison with roasted and smoked beets, fig, salsify, rsti, yogurt and cooking juices; with a dessert of caramelised white chocolate panna cotta, orange doughnuts, hazelnut ice-cream.


The judging panel included industry heavyweights Philip Howard, Angela Hartnett, Atul Kochhar, Mark Sargeant, Tom Kerridge, Daniel Clifford and William Curley.


Having originally followed in his fathers footsteps at catering school in Walthamstow, before landing a job at the family-run Fredericks in Upper Street in Islington, it was at the since defunct Michelin-starred restaurant Les Alouettes in Claygate where he discovered his taste for fine dining.


Before launching his own restaurant in autumn 2011, Alyn worked his way through the kitchens of Gordon Ramsay and then Marcus Wareing.
