Your best-seller? In pubs, it’s Little Haka, a 3.5% fruity bitter with New Zealand hops. It is lower-ABV but it has really good balanced flavour, without resorting to ‘throwing loads of hops at it, to create the flavour’.

Your personal fave? My personal favourite is Little Smooth, our milk stout. I love its depth of flavour; it’s a very fulfilling drink, be it in cask or keg, or in a bottle.

Your most unique? Our most unique beer is probably our 1917 Imperial Pilsner, a strong 7.4% pilsner that uses a yeast that was last used commercially in St Petersburg, 1917. We’ve brewed this every year for the last four years.

One you wish was yours… As I write this, I’m on holiday in New York with my family, and staying in Brooklyn. A couple of nights ago I tried Coney Island’s Mermaid Pilsner, and it was utterly delicious. It was a Pilsner that had a lovely honey taste but it also used a bit of rye malt, which gave it a slight spicyness; and it used American hop, probably Ahtanum, which was lively. Anyway, it was a great Pilsner that had broken the traditional style-guide (Pilsner malt plus German hops) but was great.

What’s next stage for your brewery? We hope to simply double our production by expanding out our distribution.

Finally, where’s the best place for people to try your beer? In terms of pubs, well there are plenty in London and Surrey; but try The Onslow Arms in Clandon - you can normally find us there.
