Daniel Britten at Britten’s Restaurant, Guildford
I am delighted and very proud to be voted a finalist in the chef of the year category. It’s a real credit to the entire team at Britten’s. What drives my cooking is my obsession with fresh, seasonal ingredients, flavour, taste and texture. Our aim at Britten’s is to serve plates of sensational food and to provide a memorable dining experience to our guests. I achieve this with some great cooking and by sourcing amazing produce and ingredients from our local growers and producers. To be recognised in this way by our customers shows that we are getting it right!
Steve Drake at Drake’s Restaurant, Ripley
Wow, it’s amazing to be nominated for a second year. We have some great chefs in Surrey, so it’s a very special feeling. We are in constant development of our dishes and stick to the seasons rigidly. This year, our monthly changing menus have been a real hit and a chance to show our guest new ideas, flavours and textures. I try and hit the balance of being creative and still feeling familiar, and I think people like this approach, after all our guests are the most important thing. Being a finalist is very humbling and I can’t wait; thank you Surrey.
Eric Guignard at The French Table, Surbiton
I am very happy to be nominated for this award by our guests. As a Frenchman living in Surrey, a nod like this makes me feel accepted by my adopted home. The French Table opened fourteen years ago and I am still just as passionate about the dishes I create as I was the first day we opened. I put my heart into every plate of food I send out of the kitchen. My menus change quite a lot as it’s all about my mood and the seasons. I used to have quite a classic French style when we first opened but it’s evolved to be become an Eric-English-French style - it’s bold, punchy flavours and I like it.
